Theme: Weird Food Combinations
Today I stepped outside my comfort zone. Erin and I brainstormed this about a week ago, and it actually turned out tasty. I’ve never made cashew butter before, but this month is about learning, right?
Have you ever had potato chips with Nutella? That was our idea. Nutella is (sadly) not vegan though. Instead of running to the store for hazelnuts, I tried my hand at some chocolate cashew butter instead. Add lay’s potato chips and voila. Don’t mind that it looks kind of like runny poo. The saltiness and sweetness makes for an interesting but fun combo.
- 1/2 cup cashews
- 1 tablespoon cocoa powder
- 2 squirts Agave
- Soak the cashews in water for at least two hours, then add to high speed blender (I prefer this over food processor for amounts as small as this)
- Add the rest of the ingredients and blend. Easy! If it seems too dry, add a teaspoon at a time of plant-based milk if you’d like
