Vegan Mofo Theme of the Day: Rise and Shine! It’s MoFo time! Tell us about your breakfast.

CrustWhat can possibly be better than breakfast? Not much. It’s certainly my favorite meal of the day because of how diverse it can be. Everything from sweet to savory, healthy to over-the-top decadent, and anywhere in between. The only thing we could think of that could possibly be better than breakfast was eating breakfast multiple times. That, and sharing it with a bunch of non-vegans to kick off vegan mofo in true spirit: spreading the word about how awesome vegan food is.

IMG_5613When we were brainstorming for our vegan mofo cooking/baking storm, Elly made fun of how many times I suggested quiche (mofo themes for days 1, 2, 20). Quiche was a brunch staple in our house growing up and I hadn’t tried my hand at a vegan version before today. This spinach, mushroom, sun-dried tomato beauty from Angela Liddon’s oh she glows blog came to be today and was more than bad ass enough to give us a good start to the month. True proof that it was delish to both vegans and omnivores? There was only one lonely slice left (embarrassingly too, since there was only four of us eating dinner).

IMG_2992For the sweet/dessert side of breakfast for dinner, vegan cinnamon rolls came to the rescue. We tried our hand at these from the minimalist baker and they had the perfect tender chew. I love the yeast-smell they created throughout the kitchen during a quick rise and then baking and I love how simple the recipe was. As sides for our breakfast for dinner, we diced up some fruit, drizzled it with a little lime juice, agave nectar, and poppy seeds for a fresh fruit salad and dished up some plain-jane hash browns (crispy of course).

It was great to be able to share some of our vegan kitchen adventures and I loved that sharing it with others inspired some discussions about why I choose to become vegan.

Phew, all that cooking and writing was tiring but worth it! A little hint for what we’re dishing up tomorrow, it may start with mac…but it certainly doesn’t contain any cheese. Thanks for joining us today.
